Pancit Malabon or goto is never complete without tokwa't baby, a side dish of
boiled pork cuts and pieces of fried tofu marinated in vinegar, garlic and soy sauce.
Tokwa't baboy may be enjoyed as a snack or an entree at regular meals. It is also
a favorite pulutan at drinking sessions. |

Tokwa't Baboy

|
1/2 lb. pork
2 square firm tokwa (tofu)
1 head crushed garlic
1/2 cup vinegar
1/2 cup soy sauce3/4 tsp. salt
1 small chopped onion

Boil pork in salted water until
tender. Drain and cut into small cubes. Mix remaining ingredients together and toss in the cubed pork and tokwa. Serves two. |
